COBALT OYSTER MENU
Cobalt is renowned for it's flavorful variety of oysters. Oyster harvesting is an extraordinarly weather-dependent activity. We can never be sure what will be available in the market. However, you can usually expect three to five different varieties of fresh, raw or cooked oysters each night at the Cobalt Oyster Bar.
Raw Market
Served with crackers, lemon, hot sauce & cocktail.
Chargrilled Market
On the half shell, topped with your choice of garlic, parmesan butter, bacon & blue cheese butter or roasted red pepper butter.
Baked Market
Our servers will tell you about the sauces and combinations for your choice.

OYSTER FACTS
Did you know its' a myth that oysters should only be eaten in months that end in "R"? Oyster are equally good to eat all year. It is believed the myth started due to poor refrigeration in past times.
Did you know that an oyster can filter approximately 50 gallons of water a day?
An oyster produces a pearl when foreign material becomes trapped inside the shell. The oyster responds to the irritation by producing nacre, a combination of calcium and protein. The nacre coats the foreign material and over time produces a pearl.
